Domodedovo Catering Service is one of the largest companies in Eastern Europe and the CIS for the production and delivery of in-flight catering, producing up to 60,000 rations a day. The enterprise occupies an area of 2.2 hectares. The facility is currently undergoing reconstruction. The total area of the premises after reconstruction will triple to constitute nearly 24,000 sq. m, thus increasing the facilitys production capacity to 80,000 rations a day.
More than 1,300 people work at Domodedovo Catering Service. All the cooks and bakers have the highest qualification. The facility offers a wide choice of hot meals, snacks, desserts and confectionery, including both the standard menu (hot, cold, canned, light meals) and special types of menu (Muslim, health, vegetarian, baby, etc).
The car fleet of Domodedovo Catering Service has 50 pieces of equipment, including 15 auxiliary transport units and 35 units of special lift trucks for delivery and loading of in-flight catering on board any type of aircraft.
The quality and variety of in-flight catering is a special concern for leading airlines and a significant factor in shaping their reputations. Today, Domodedovo Catering Service supplies products to more than 80% of Russian airlines flying out of Moscow Domodedovo Airport, and to a number of major foreign airlines such as British Airways, Emirates, Lufthansa, Vietnam Airlines, United, Singapore Airlines, JAL, Etihad Airways, TAP, etc.
Customer-oriented approach is the main principle for the specialists of the in-flight catering facility. Thus, for each airline special menus are prepared according to the given specifications, with consideration of the requirements for table setting. Ready-made food is placed in containers, which are checked by the security service and sealed before being loaded on board.
The facility is equipped with both universal and special facilities (cooling and deep-freeze cabinets), and modern technologies are used in the work process. For the preparation of hot food, cook and chill technology is used (heat treatment - shock cooling). This technology allows the production of meals with a shelf life of up to 6 days at a storage temperature of -18 C. The facility mastered food production and subsequent packaging according to ESL (Extended Shelf Life) technology. Use of this technology increases the shelf life of food up to 5 days without using preservatives. High quality, taste and other properties of the food are fully preserved. This allows airlines to order food not only for one-way flights, but also for return flights. In addition, equipment for bottling beverages in individual containers has been installed at the facility.
The high quality of Domodedovo Catering Service products and their compliance with federal standards are confirmed by the corresponding certificates. The enterprise has introduced a system of quality and food safety management, based on HACCP (Hazard Analysis and Critical Control Points) principles.
The facility has a Tasting Board to monitor product quality and ensure its constant improvement.
