Domodedovo Air Service in-flight catering facility

Domodedovo Air Service is the largest in-flight meals manufacturer and supplier in Russia that manufactures up to 60,000 meals a day.

The quality and diversity of in-flight meals is the object of special care of the leading airlines and a significant factor that contributes to their reputation. Today, Domodedovo Air Service supplies its products to more than 80% of Russian airlines flying from the Domodedovo airport, as well as a number of the largest foreign air carriers, such as British Airways, Emirates, Swiss Airlines, Vietnam Airways, Qatar Airways, Thai Airways, China Eastern, Iberia, EL AL Israel Airlines, and many others.

The enterprise located within immediate proximity of Domodedovo airport occupies 2.2 hectares of land. The overall area of the facilities exceeds 13,000 square meters. Once the current full-scale reconstruction is completed in the middle of 2007, the useful area of the production facilities will grow up to 17,500 square meters.

Domodedovo Air Service employs over 1,800 people. All cooks and pastry-cooks have the highest qualification. All the leading specialists have undergone internships abroad. The permanently available assortment of the factory includes approximately 400 main courses, hors-d’oeuvres, entrees, desserts, and confectionery.

Individual approach to each client is the main principle of the in-flight meals factory specialists. For example, the menu of airlines flying to various destinations abroad is made up in consideration of peculiarities of their passengers’ national cuisine. Meals for such airlines as Emirates, Vietnam Airways, Thai Airways, China Eastern Airlines, Iberia, and Singapore Airlines are cooked according to specifications provided by the customers in compliance with their serving requirements. Ready meals are placed in containers that are checked by the security service and sealed prior to boarding.

Domodedovo Air Service is certified on account of compliance of its culinary products and confectionery with the No.ROSS RU.У048 standard. In 2000, the company became a member of the International Flight Catering Association. At the moment, the company is introducing a quality management and food safety system based on the НАССР (Hazard Analysis and Critical Control Points) principles.

One of the world leaders in restaurant and in-flight catering, Eurest Camp Catering, acted as major technology consultant.

Hot meals are cooked using the cook and chill technology (temperature processing followed by shock freezing). The company is also experienced in production of meals using the modified gas environment technology (a.k.a. the ESL technology: Extended Shelf Life). This technology helps extend the meals’ storage term for up to 5 days without using preservatives; the organoleptic properties of food remain intact. Application of the shock freezing technology enables the company to manufacture meals with the realization term of up to 6 months, provided the meals are stored under the temperature of – 18°С. These technologies enable the partner airlines to order food not only for one-way, but also for return flights.

The bottling equipment installed at the factory enables the company to produce individually-packed beverages.

In April of 2005, Domodedovo Air Service executed a cooperation agreement with LSG Sky Chefs, a subdivision of the Lufthansa concern – the largest catering network in the world. The subdivision encompasses more than 200 caterers from 48 countries which manufacture more than 300 million meals per annum with the aggregate turnover of 2.7 billion euros. Company’s clients include approximately 300 world-famous airlines. Pursuant to this agreement, LSG Sky Chefs provides Domodedovo Air Service with consulting services.

The factory adheres to recommendations of the Tasting Board which is a standing advisory body under the Chairman of the Board of Directors of the EAST LINE Group.

The goal of the Tasting Board composed of the best specialists of the factory is as follows:

  • To improve the quality of the Domodedovo Air Service products,
  • To evaluate the level of customers’ satisfaction with the established requirements with respect to the quality of in-flight meals, and to improve the production control system at the factory.

The Tasting Board is responsible for:

  • Execution of permanent control over the organoleptic qualities of ready products, as well as the quality of raw stuffs and half-cooked foods acquired from suppliers;
  • Development of recommendations on elimination of meals that do not meet clients’ expectations; development of methods and proposal of means to improve the taste of the products.
